Gum arabic
Gum arabic is used as an additive in foodstuffs, namely as a thickening agent, emulsifier and stabiliser, for example in ready-made desserts, beverages, high-quality liquorice, marshmallows and similar soft sweets. Its effect is similar to that of gelatine, but gum arabic can also be consumed by vegans and Muslims. It has E number 414.

Before synthetic adhesives were discovered, gum arabic was used as an adhesive, for example for postage stamps. The adhesive strip on envelopes also often consists of gum arabic. It is also used as a medium in poster paint (gouache) – where it increases the gloss of the paint, which is very dull on its own – and as a binder in watercolour paint, where it is typically absorbed completely by the watercolour paper, so that no brittle paint film is formed and the pigment grains can colour the paper directly. Other applications: in foodstuffs, cosmetics and photography.
