The calcium/sodium salt of EDTA is also used in the food industry as a metal binder. The additive is designated E385 and is therefore classified as a food acid. It has a stabilising effect on the foodstuffs in question. EDTA can act as an antimicrobial agent by making metals that are essential for microorganisms unavailable, and as an antioxidant by capturing metals that act as catalysts for oxidation reactions.
